Abstract This thesis aimed to finding out a new ultrasound parameter that behaves differently on water and fat content by observing the dependence of ultrasound signal propagation parameters on the composition of the water-fat-protein multilayer system. Rapeseed oil and gelatin are used to mimic fat and protein compounds. This work mainly focused on the dependence of ultrasound velocity and ultrasound attenuation on increasing water and fat content.
